celebrating Poland and pierogies!
Guy Fawkes Day was a bust, but thankfully the "Celebrating Everything Polish Festival" held on the same day was a blast! This year's festival was held in a small event centre along the waterfront.
It was a tight space, but it was jam-packed with awesomeness! Upon arriving the first thing we did was order hand-made pierogies! As you might imagine, they were amazing. We then wandered around the other stalls. There were Polish meats, art, and books for sale.
There was also heaps of entertainment ranging from traditional dance and live polka bands to a jazz group with a Polish singer.
Though the space could easily be explored within less than an hour we stuck around for the entire day to enjoy the performances and eat even more pierogies (this time with a delicious mushroom butter sauce)! We also tried our very first placki z jablkami, which are Polish apple pancakes. As you know we try our very hardest to recreate the taste of Poland here at Yinzer in the Shire so we immediately tried our hand at making some of these delectable pancakes at home.
Placki z Jablkami (Polish Apple Pancakes)
2 c flour
1 tsp baking powder
1 tsp cinnamon
1/4 c sugar
pinch of salt
2 eggs
2 c buttermilk
2 green apples
butter
icing sugar
1. Mix together flour, baking powder, cinnamon, sugar, and salt. Once the dry ingredients are mix throughout add in egg and buttermilk. Stir well until mixture is uniform.
2. Peel and core apples, then cut thinly and dice.
3. Mix apples into the pancake batter.
4. Lightly grease skillet with butter and heat over medium heat.
5. Cook batter until lightly browned, then flip over pancake and cook for another minute.
6. Sprinkle lightly with icing sugar and top with raspberry sauce and whipped cream.

Raspberry Sauce
1 c frozen raspberries, thawed
4 Tbsp sugar
1/4 c water
1. Place thawed raspberries in a saucepan
2. Heat over low heat until reduced, then mix in water and sugar
