I've always had major issues with baking chicken. It always seems to turn out too dry or undercooked, but I've finally found two recipies that not only work great, they're simple too.
Plain Chicken
3 Boneless Chicken Breasts
1 1/2 Tbsp. Butter
Preheat oven to 350 degrees
Stick the Chicken Breasts in the bottom of a Pyrex pan so they aren't touching. Put 1/2 a Tbsp of butter next to each breast. Bake in oven at 350 degrees until cooked through. Voila!

Italian Dressing
Marinade chicken in a ziploc bag over night. Preheat oven to 350 degrees. Stick chicken breasts in the bottom of a Pyrex pan so they aren't touching. Bake in oven at 350 degrees until cooked through.
